| Summary: | The purpose of the presented project was to generate a proposal to contribute to the development of the gastronomic and tourist aspect of the sector of La Manga del Cura, Manabí because it has the natural attributes so that this proposal has an infrastructure and natural environment, had as its first I pass the diagnosis of the gastronomic sector of the establishments of ecological structure of the sector to be able to determine the current situation of the niche. The determination of the demand was carried out using the chain ratios method through the google forms tool and the relative percentages of desire, need and demand, obtaining that 7,363 people have a visitor profile in this proposal. In addition to the established market segmentation, a fairly young population between the ages of 18- 28 years old, who frequents the spaces of ecological structure mostly with their family. An investment of $35,533 dollars is necessary for the implementation of the organic restaurant proposal with the characteristics described here that will convert it a space with a natural environment where there is typical Ecuadorian gastronomy and healthy food.
