| Crynodeb: | The objective of the research was to bromatologically assess two varieties of mango (Mangifera indica) Tommy Atkins and Kent, artificially ripened with calcium acetylide CaC2. For the following study, a completely randomized design (DCA) with a bifactorial arrangement A x B was used, with six treatments and three repetitions, to determine differences between measures, the Tuckey test was used at (p≤ 0.05). The variables evaluated were: brix degrees, pH, humidity, fat, energy, protein, acidity, texture, fiber and shelf life. Regarding the results obtained, it is highlighted that, regardless of the variety, both in physical parameters and in chemical parameters of the fruit, the T3 and T6 treatments stood out, these treatments were subjected to a dose of 10 g / kg for 48 hours in a hermetically closed environment, controlling that the temperature is 27.7 ° C and the relative humidity of the environment between 90%. It is important to note that in addition to the fact that the ripening time of the fruit could be accelerated with the different dosages, in parallel the useful life of the same was shortened since the use of calcium acetylide also helps accelerate the senescence process of the fruit.
