This protein is insoluble in water and rich in amino acids such as cysteine, methionine, glycine, serine and alanine, as well as various mineral salts, which can be interesting to obtain alternative keratin hydrolyzate. The methodological research design was experimental, for which four (4) fermentations were performed, corresponding to a completely randomized experimental design, resulting consider two factors [substrate concentration and concentration of inoculum and two levels for each factor] ) resulting four treatments T1 = 18% of HPP 2 g / L inoculum, T2 = 18% of PPH 3 g / L inoculum, T3 = 23% of PPH 2 g / L inoculum and T4 = 23% of PPH 3 g / L inoculo. Este process is performed in an aerobic fermentor at room temperature, adjusting the pH (7.5) and measuring dissolved oxygen concentration (%). The criteria used to select the concentration of feathers culture medium (18 g / L and 23 g / L) and incubation temperature (room temperature) was based on previous studies with protease enzymes. Determining the concentration of total nitrogen in the medium was performed by UV-Visible spectrophotometry, by the method of persulfate digestion, the maximum concentration of nitrogen is reached in the treatment 2 (1.5%), which multiplied by protein factor of 6.25 gives a percentage of 9.4% protein in the hydrolyzed keratin, showing significant difference (p <0.05) the rest of the treatments after 24 hours hydraulic retention. In conclusion, the enzymatic hydrolysis of chicken feather meal using the Bacillus spp producing proteolytic enzymes as possible. |

Las plumas de pollo poseen mayoritariamente más del 83 % de una proteína azufrada fibrosa y con estructura secundaria en forma de lámina plegada llamada beta queratina, también presente en el pico, las garras las uñas. Esta proteína es insoluble en agua y rica en aminoácidos como la cisteína, metionina, glicocola, serina y alanina, así como diferentes sales minerales, la cual puede ser una alternativa interesante para la obtención de hidrolizado de queratina. El diseño metodológico de la investigación fue de experimental, para lo cual se realizó cuatro (4) fermentaciones, correspondientes a un diseño experimental completamente al azar, resultantes de considerar dos factores [concentración de sustrato y concentración del inoculo y dos niveles para cada factor]), resultado cuatro tratamientos T1=18 % de HPP 2 g/L inoculo, T2 =18 % de HPP 3 g/L inoculo, T3=23 % de HPP 2 g/L inoculo y T4=23 % de HPP 3 g/L inoculo.Este proceso se lo realiza en un fermentador aerobio a temperatura ambiente, ajustando el pH (7,5) y medir la concentración de oxígeno disuelto (%). El criterio utilizado para seleccionar la concentración de plumas del medio de cultivo (18 g/L y 23 g/L) y la temperatura de incubación (temperatura ambiente) fue con base en ensayos previos realizados con enzimas proteasas. La determinación de la concentración de nitrógeno total en el medio se lo realizo mediante espectrofotometría UV Visibles, mediante el método de digestión de persulfato, la concentración máxima de nitrógeno se la alcanzo en el tratamiento 2 (1,5 %) lo cual multiplicado por el factor proteico de 6,25 nos da un porcentaje de proteína del 9,4 % de queratina en el hidrolizado, presentando diferencia significativa (p<0,05) del resto de tratamientos al cabo de 24 horas de retención hidráulica.
