To determine the yield to the carcase of the bovine sacrificed in the slaughterhouse of the canton Arenillas. 2. To estimate the economic profitability. The taking of the samples was carried out in a lapse of 60 days that com-prise the analysis of 100 bovine sacrificed in the slaughterhouse. The yield to the carcase was of 48,35%. The bovine sacrificed in its majori-ty was female which represented 81%. The live weight average of the bovine was estimated in 686,87 pounds and of the sacrificed of 330,39 pounds. The estimated income by animal sacrificed was of 333,95 dollars. The middleman's economic profitability for each ani-mal cut up was determined in $ 60,20. |
