Gaia:In order to provide an alternative to consumers on the adequate intake of fruits, was implemented in the production and marketing of tropical fruit pulp Fruit in the laboratory of the Faculty of Agricultural Sciences, University of Machala. The objectives were: Process the fruit pulp to determine the relationship - waste, identify the source of fruits: mango, pineapple, papaya, melon, passion fruit, badea, borojó, soursop, guava and arazá marketed in Machala and determine the costs of production of pulp processed species. The work was conducted in two phases, the first applies the study of tropical fruit markets with the completion of 267 interviews with marketing and consumer of tropical fruits to study the trend in consumption, forms of marketing, relationship between buyer and seller, days of the week that best sell, purchase frequencies, relationships established in the marketing and retail price. The second phase corresponds to the manipulation process of pulp and their preservation by cold and cooling was analyzed soluble solids content of each species where the higher levels it had the soursop and borojó.
