| Summary: | The finality of this research is to develop a formula for making nectar based on papaya and passion fruit in purpoce to get a good quality product that meets the requirements of technical regulations Ecuadorian INEN, 2337 while seeking new alternatives to the industrialization of these two fruits. The raw materials used for the production of nectar have nutritional properties that allow to obtain a product of high nutritional value. The methodology used to produce the nectar based fruit papaya and passion fruit papaya in different percentages (70%, 50% and 30%) and passion (30%, 50% and 70%) involved the preparation of three formulations and through a sensory analysis of its attributes color, flavor, aroma and texture, the formula with the highest percentage of acceptability by untrained panelists potential consumers of nectar was determined, the formulation conmayor acceptance rate was Formula 1 (70 papaya pulp% and 30% of passion fruit pulp) |
