The raw materials used for the production of nectar have nutritional properties that allow to obtain a product of high nutritional value. The methodology used to produce the nectar based fruit papaya and passion fruit papaya in different percentages (70%, 50% and 30%) and passion (30%, 50% and 70%) involved the preparation of three formulations and through a sensory analysis of its attributes color, flavor, aroma and texture, the formula with the highest percentage of acceptability by untrained panelists potential consumers of nectar was determined, the formulation conmayor acceptance rate was Formula 1 (70 papaya pulp% and 30% of passion fruit pulp) |
