الملخص:This research aims to determine main microbiological analyzes, sensory and bromatological of crab meat (Ucides occidentalis), to provide security to the consumer in the cantons of Huaquillas and Arenillas. The presence of microbial (fecal coliforms, Echericha coli, Pseudomonas and Salmonella) in the crab meat, generate a potential for the occurrence of an outbreak of food poisoning. Of the samples obtained in the 2 counties, found the presence of fecal coliforms and echericha coli in 100% of the samples analyzed. The counting of colony forming units, compared with the health standard on microbiological criteria for health quality and safety in food and beverages for human consumption, showed that the product offered crabmeat in the 2 cantone studied did not meet the standards set for human consumption. The results generate a concern regarding the hygienic quality of food handlers craft marine products and control of diseases transmitted by contaminated food such and therefore requires the cooperation of the authorities and the Institute of Hygiene, the INP and Municipal Commissioner, in view of improving public health of the 2 counties.
