| Riassunto: | In recent years, the consumption of chicken has been increasing, however, antibiotic residues and improper handling of meat brings with it potential conditions for those who consume it. The objective of this research was to evaluate the quality of the chickens marketed in the municipal market in Flavio Alfaro canton, for which a survey was carried out on chicken vendors to determine the conditions of: transportation, origin, storage and biosecurity measures when selling the product. To carry out the detection of antibiotic, 24 samples were taken at random where 12 corresponded to breast and 12 to liver, the samples from El Carmen canton, showed 62.5% positive for the presence of antibiotic and the preceding ones from Chone canton 75% were positive to the qualitative analysis of the “Premi test”. The statistical analysis between the variables origin and chicken pieces showed that there is no significant difference with respect to El Carmen and Chone sites, indicating that both breast and liver antibiotic residues were found in similar proportions, likewise the variable chicken pieces and exposure time less than 5 hours and greater than 5 hours declared that there is no significant difference (p-value >0.05) with respect to the time of the product in the dispenser, so the product is inadequate and not suitable for consumption, which affects the quality and safety of chicken in the canton. |
