Тойм:The objective of this research was to evaluate the existence of heavy metals Lead (Pb) and Cadmium (Cd) in the fruit and preserves of green bell pepper (Capsicum annuum L.), grown in three sectors: Figueroa, El Gramal, and Las Cañitas, near the city of Calceta, comparing the results with the CODEX STAND-193 standard, the quantification of these metals was performed through atomic adsorption by the Standard Methods 3111B Modif/AA method for the determination of these metals. The results in the fruit showed a concentration of 0.01 ± 0.00mg/kg for Pb and 0.00 ± 0.01mg/kg for Cd in the three crops evaluated, demonstrating that the green bell pepper samples do not exceed the permissible limits established in the standard (Pb 0.1mg/kg and Cd 0.05mg/kg). While the results of the Pb preservation showed a maximum of 0.02 ± 0.00mg/Kg for all crops, which is within the limits allowed by NTE INEN 405, in the case of Cd it showed a maximum of 0.01 ± 0.00mg/Kg for all crops according to CODEX STAND 193- 1995. Although these metals did not exceed the permissible limits established in the regulations for both the fruit and the canned product, it should be noted that they are bioaccumulative and over time can cause health problems.
