| Shrnutí: | The objective of this research work was to diagnose the sources of contamination in the microbiological and bromatological quality of unpasteurized cheeses from the Bolívar canton. An interview and survey was applied as a research technique to 9 producers of fresh cheese from the Bolívar canton, choosing 3 producers. For each parish belonging to this canton, a diagnosis was carried out through a check list in which it was possible to know that all the farms presented non-compliance with Good Milking Practices (BPO) and Good Manufacturing Practices (GMP), according to established by the Ministry of Agriculture, Livestock and Fisheries (MAGAP); Then cheese samples were taken for the respective bromatological analyzes (ash-humidity) these data were analyzed by analysis of variance in Microsoft Excel in which it is shown that for the ash variable there is a notable difference between the farms because they were obtained result of 2.8051 to 5.0534 on the other hand, humidity presents data between 44.0017 and 58.8680 which are within the permissible range by the INEN-1528 standard; The microbiological analyzes (Escherichia coli, Staphylococcus aureus, Salmonella, Listeria monocytogenes, Enterobacteriaceae) were evaluated using binary logistic regression which determined that there was no significant statistical difference between the cheese producing farms, that is; They all have the same contamination in the cheese, evidencing that the farms do not comply with the INEN-1528 standard according to the maximum permissible index for the established analyses. |
