Sumari:The general objective of this research is to establish the key factors for the development of gastronomic ventures in times of sanitary crisis (COVID-19) in Portoviejo, Manabí, Ecuador: (1) a tourism diagnosis was conducted where interviews were applied to public managers and entrepreneurs thus identifying problems such as, low rates of basic services at the general level of the canton, in addition, it was determined that the agricultural sector is the main productive activity, however, the tertiary sector activities are those that mostly generate income and finally, it was established through the SWOT matrix that the study area requires enhancing its opportunities to take advantage of the strengths it possesses. In (2) the management of the enterprises is analyzed, applying 196 surveys directed to gastronomic entrepreneurs and 285 surveys to clients to know the demand and supply offered by the territory. Finally, (3) the identification of strategies based on product, price, distribution and gastronomic services, also using the CANVAS matrix. Then, actions are established that entrepreneurs must follow in order to achieve viability with their venture in legal, technical, commercial and economic-financial guidelines. Finally, it is concluded that viability factors such as trust, quality, among others, are of vital importance since they can play a crucial role in the development of gastronomic ventures.
