| 要約: | The objective of this research is to revalue the gastronomic identity of the San José de Montúfar parish, located in the Montúfar canton, Carchi. To carry out this research, a mixed approach was used combining qualitative and quantitative elements through which information was collected from surveys carried out with 163 people and interviews with experts in the area of ancestral cooking and utensils of the sector, as well as a review thorough bibliography. To create the digital catalog of ancestral recipes from the sector, the following methods were applied: inductive-deductive, historical-comparative and analytical-synthetic. The results of the surveys carried out reveal that 51% of those surveyed are unaware of the preparation of ancestral recipes, among which Vicundos, Champús, Morocho, Arroz de Mora, Roasted Cuy, Toasted Beans, among others, stand out. An important aspect to emphasize is that 46% assure that the loss of this knowledge is due to the new customs of today's society and the low demand for these preparations with 35% which implies that the preparation of a digital catalog that exposes the different recipes through a QR code, as stated in the surveys with 58%, would significantly help their revaluation. 13 ancestral recipes were identified, as well as the importance of different utensils of great cultural value that highlight the identity of the town and the importance of the ancestral roots that are demonstrated through the preparation of these recipes. It is concluded that ancestral cuisine has great significant value in the parish and although much interest in these preparations has been lost, its legacy still endures and a digital catalog can become a great ally when preparing an ancestral recipe. |
