It was determined that the contamination is triggered by the lack of knowledge of the personnel about good commercialization practices and integral waste handling, lack of hygiene, lack of asepsis in work surfaces and tools, non-existent control of pests and presence of physical contaminants (dust, ambient temperature). Samples from 25 retail locations (18 market stalls and 7 butcheries) were analyzed microbiologically in two schedules (06:00 and 11:00 am) being Salmonella, Total Coliforms, Escherichia Coli, Staphylococcus aureus and Aerobic mesophilic the parameters analyzed, according to NTE INEN 1338. By this study, the presence of all the aforementioned was evidenced exceeding the majority of the maximum allowed limits. Overall, only 16% of the samples were within the acceptable ranges of microbial load. The probability of contamination for market stalls was determined to be higher than for butcheries. This allows us to conclude that good hygiene and handling practices should be applied to take care of the safety of meats and that the population is not affected by foodborne illnesses.

La investigación tuvo como objetivo determinar la calidad higiénico-sanitaria de la carne de res expendida en quioscos y tercenas en la ciudad Calceta, a través de un diagnóstico se identificaron las fuentes de contaminación en la comercialización, en donde se utilizó un “checklist” de prerrequisitos de cumplimiento con base en la norma NTE INEN 2687. Se determinó que la contaminación se desencadena desde el desconocimiento del personal de buenas prácticas de comercialización y manejo integral de residuos, carencia de higiene, falta de asepsia en superficies y herramientas de trabajo, inexistente control de plagas y presencia de contaminantes físicos (polvo, temperatura ambiental). Se analizaron microbiológicamente muestras de 25 lugares de expendio (18 puestos y 7 tercenas) en dos horarios (06:00 y 11:00 am), siendo los parámetros analizados Salmonella, Coliformes totales, Escherichia Coli, Staphylococcus aureus y Aerobios mesófilos, acorde a la norma NTE INEN 1338. En donde se evidenció la presencia de todos los microorganismos anteriormente citados, mostrándose una superación en la mayoría de los límites máximos permitidos. De forma general, apenas el 16% de las muestras se encontraba dentro de los rangos aceptables de carga microbiana. Se determinó que las probabilidades de contaminación para los quioscos son más altas que para tercenas. Esto permite concluir, que se deben aplicar buenas prácticas de higiene y manipulación, para cuidar la inocuidad de las carnes y que la población no sea afectada por las Enfermedades de Transmisión Alimentaria (ETAS).
