总结:In the present work, the inhibitory power of the alcoholic extracts of the agro-industrial by-products of orange and passion fruit was studied against four bacteria: Listeria monocytogenes, Streptococcus mutans, Salmonella spp., Escherichia coli and two fungi: Penicillium sp, and Rhizopus spp. The alcoholic extracts of orange and passion fruit peels in concentrations of 0,05 and 0,1% were applied to strains of the six microorganisms and the zone of inhibition and the growth curve along 24 h were determined. The results showed that the highest concentration of the extracts (0,1%) of both fruits formed inhibition zones of larger diameter. The bacteria were more resistant to orange extracts compared to passion fruit extracts, with complete inhibition at 24 and 6 h, respectively. On the other hand, the complete inhibition of the fungi was after 4 hours of action of extracts of the two fruits.
