| Resumo: | The traditional gastronomic preparations from the community of San Francisco de Cotacachi have not been fully socialized in the country, despite their high participation in the traditional products, preparations and techniques. This has put this gastronomic and cultural patrimony at risk, which could disappear in time, causing future generations not to benefit from this knowledge. This research aims to recognize, rescue and value the traditional dishes prepared in the community of San Francisco, using the analytic-synthetic, qualitative and model methods to obtain, as final result, an inventory about the elaboration of the representative dishes from the community, housewives and grandmothers; who can share their ancient knowledge about techniques, tools and elaboration procedures of their gastronomy. As a final result, it can be concluded that the traditional recipes of the community of San Francisco, have been losing their value and identity. The elder women are the ones in charge of the preparation of their traditional recipes, while the new generation has lost their interest in knowing, applying and continuing with their family legacy. |
