Sažetak:The proposed project includes the development of a collagen-based delicacy in Ecuador, to meet this goal is monitored through five phases are: research, production process, product design, market survey and financial analysis. The research phase is oriented in knowing about the use of meat-products industry in Ecuador, the industrialization of collagen and gelatin, nutritional content of candy now, raw materials, industrial equipment and business analysis on the candy. At the stage of the production process down two production processes for the production of the delicacy, made four design tests based on modifications of the quantity of sugar, to obtain the best results in terms of viscosity and sweetness, getting a performance 170 units of candy using a raw material of 2724 g. and thus reach the desired formulation, not forgetting in these parts use good manufacturing practices and waste management. In the product design phase includes a description of the product, shelf life, sensory evaluation, nutritional value and comparison shopping on the nutritional value of snacks in the country and the new candy.
