Samenvatting:The development of this research document for the work qualification exposes the viability study on creating a Business plan for a restaurant with executive menus, which will have the name of Chaupi Shungo and it is focused on the economically active population, located in the area of La Floresta, in the city of Quito-Ecuador. This arises from the idea of the substantial growth of the production of executive lunches. A descriptive field research was used for this purpose; executive menus virtual customers were surveyed. As a result it was possible to find that there is a substantial growth in the offer of restaurants of food and beverages, especially in the area of La Floresta, which is a place of large crowds with enough attractive for customers already. The technical study projected the need of an infrastructure that must have an administrative area; dinning room, kitchen, bathrooms and parking based on the customers needs. It is estimated to begin activities with 8 people, 3 in charge of table service, 3 people in the kitchen area, including a chef, cooker and an assistant and 2 people in the administrative area.
