| Čoahkkáigeassu: | The community of Peguche, in the province of Imbabura, is rich in products due to the greatness of the Pacha Mama, therefore, the gastronomic assemblage of traditional drinks is important so that the identity of the community doesn't go extinguished, and on the contrary, the information is spread throughout the country. The information of the present investigation has been compiled with spoken and written interviews, made to people with traditional knowledge of the community. In addition, through observation cards it has been possible to know the way in which the indigenous people prepare their drinks and how over the years their ancestral forms have changed. In the following three chapters, some important subjects are presented: a documentary research on beverages, the results of the interviews on recipes and gastronomic heritage of Peguche, and finally, technical data sheets with the information previously obtained. Although the community of Peguche is known as a community dedicated to textiles, it possesses an identity that is in line with its culture and traditions, respecting traditional beverages. As a result of this, it is possible to make the gastronomic patrimonial value, stronger and lasting. Finally, with the present investigation, it is intended that indigenous knowledge is diffused through platforms, so that the traditional beverages, are spread throughout the country thanks to what they contribute within the gastronomic heritage and its nutritional value, as well as what they represent for the community. |
