Sumario:This work is the creation of a line of handcrafted pastry products based on tamarind, was developed with the purpose of promoting the consumption of tamarind, knowing the various applications and uses thereof. This is theoretically based on sources of high academic rigor in which we find the origin, uses, characteristics, importance and nutritional properties of tamarind and also the properties for its gastronomic application. The development of a tamarind-based artisan pastry line was the method in which I applied and I was able to verify that tamarind is a totally versatile fruit, from which I could obtain four different preparations, such as tamarind cookies, tamarind cake, profiteroles stuffed with tamarind custard and tamarind mousse. This was validated by five people who formed the FOCUR GRUP and I had their validation and approval of the products. A validation was also carried out with gourmet experts who, after tasting and suggestions for improvements in the product, validated my products. The creation of a manual indicating step by step the elaboration, procedures and methods used are a visual and theoretical aid that gives veracity to my project.
