Shrnutí:The present investigation was carried out at the Guaranda municipal slaughterhouse and its objective was to determine the alterations in erythrocytes, leukocytes, thrombocytes and main chemical parameters; to relate blood biometry and blood biochemistry with the pH of the meat. In addition to identifying the pH levels of the meat of the slaughtered animals. The study included 37 cattle of which all the physiological constants in the penning area, blood samples for the analysis of hemogram and biochemistry were taken, ending with the measurement of meat pH. The results showed diverse alterations in the hematological biometry, with leukocytosis in its great majority, classifying them as lymphocytosis, granulositosis and monocytosis; as for the red line, erythricitopenia, anemia and thrombocytopenia were evidenced; likewise, in the blood biochemistry, hypoglycemia was evidenced, as well as a decrease in blood urea nitrogen and hypophosphatenia and elevation of creatine kinase. With respect to the pH found, they were 3 and 4 being alkaline, while 5 and 6 were considered normal. In conclusion, the alteration of the hematological tests did show variation with respect to the pH of the meat.
