Shrnutí:Cereals are essential in the daily diet, for their contribution of carbohydrates, proteins and lipids; wheat, oats and quinoa are worldwide recognized for their nutritional value. Energy bars are food supplements that provide energy and compensate for caloric losses. The present research focused on developing energy bars using expanded wheat, oat and quinoa seeds, with the objective of determining the optimal concentrations and their impact on caloric values and shelf life. The characterization of raw materials complied with regulations, highlighting the specific properties of wheat, oats and quinoa. The experimental design evaluated different treatments, with T3 (20% wheat + 40% oats + 25% quinoa + 15% honey) and T1 (32% wheat + 25% oats + 28% quinoa + 15% honey + 5% chocolate) being the most outstanding. Sensory analysis favored T3 in aspects such as color, odor, flavor, while T1 stood out in texture. The evaluation of caloric value revealed that T1 registered 358.93 kcal, being the most caloric option. Shelf life, evaluated under ambient conditions, showed that T3 maintained its quality for 77 days, meeting established standards. The creation of a commercial image followed the NTE INEN 1334-1 standard, ensuring a coherent and complete presentation of the product.
