| সংক্ষিপ্ত: | In the present research, white malanga (Xanthosoma sagittifolium) and purple malanga (Xanthosoma violaceum) tubers were studied, besides having nutritional properties, they also have high concentrations of polyphenols, flavonoids that provide antioxidant activity or confer bioactive properties when consumed. Therefore, the objective is to determine the antioxidant and antimicrobial properties and concentration of polyphenols in extracts obtained by Soxhlet and supercritical fluids in the Research Laboratory of the State University of Bolivar. The growing interest in these properties has motivated the search for natural sources of chemical compounds for application in pharmacology and in the elaboration of functional products. The extract with the highest volume obtained was the purple malanga by the Soxhlet method with a value of 10.7 mL, likewise the extract of the same variety by SFE was obtained 1.2372 g. It was determined the antioxidant capacity that was expressed in μmol of trolox/g sample, obtaining higher concentration in the white malanga by SFE, by the methods DPPH 207.87, ABTS 51.11, FRAP 64.33 and the concentration of polyphenols by the Folin-Ciocalteu method 6.98 mg gallic acid/100g sample. For the antimicrobial activity was evaluated with bacteria of E.coli, Salmonella sp, Arcobacter and staphyloccocus aureus in which low antimicrobial activity was demonstrated. It was chemically characterized by gas chromatography coupled to a mass spectrometer (GC-MSD), 37 chromatographic peaks were recorded in the white malanga and 48 peaks in the purple malanga, the compound Phthalic acid, bis(2-ethylhexyl) ester, was identified in the peaks of greater intensity. |
