En el presente trabajo de titulación, se realizó un estudio de tipo observacional, descriptivo con un diseño no experimental, con enfoque cualitativo-cuantitativo en uvas (Vitis vinifera L.) variedad roja (IFG three) y variedad negra (Sugra sixteen), por medio de un estudio comparativo conocer que variedad de uvas (rojas y negras) cultivadas en Ecuador, presentan mayor contenido de polifenoles totales y actividad antioxidante. Se procedió a realizar la extracción del material vegetal con etanol al 70% para luego ser analizadas por medio del método Folin-Ciocalteu para la determinación de polifenoles totales, obteniendo como resultado 1320 mgGAE/100g en las uvas negras y 1030 mgGAE/100g en las uvas rojas; mientras que para la determinación de actividad antioxidante se utilizó el método 2,2 – difenil-1 picrylhydrazy (DPPH), teniendo como resultado 2.24 mg/ml en las uvas negras y 2.75 mg/ml en las uvas rojas. Evidenciándose que las uvas negras poseen mayor cantidad de polifenoles totales y actividad antioxidante.Grapes have high nutritional value and medicinal benefits for consumers, as well as pronounced antioxidant power and a free radical inhibitor due to their abundance of phytochemicals. In the present degree work, an observational, descriptive study with a non-experimental design was carried out, with a qualitative-quantitative approach in grapes (Vitis vinifera L.) red variety (IFG three) and black variety (Sugra sixteen), for through a comparative study to know which variety of grapes (red and black) grown in Ecuador, have the highest content of total polyphenols and antioxidant activity.
