In addition, it was determined that the accounting record of losses is charged to the cost of sale and credited to the inventory, in addition to that if the generation of this is too much........El presente proyecto está direccionado a las Pymes que se dedican al expendio de carne básicamente desconocen cómo registrar las mermas, por tal motivo se realizará un estudio del porqué existe esta pérdida y cómo se las puede controlar. Adicionalmente, se presenta la necesidad de identificar el proceso en donde existe la mayor cantidad de merma generada, esto con el objetivo de aplicar estrategias que permitan disminuir y se garantice una mejor producción sin dejar de lado la calidad del producto que caracteriza a la entidad como tal. Con el estudio de las empresas analizadas se pudo concluir que los procesos que realizan estas se encuentran enfocados en tres tipos, el primero es el de producción que es en el que afirman que más se generan mermas, seguido del proceso de distribución en donde indicaron tener pérdidas por el descongelamiento del producto y el de comercialización en el cual no destacaron generación de merma alguna.
