Zusammenfassung:Food safety represents the main factor that the consumer has to ensure that the product he consumes does not present any risk to his health. It is associated with the safety and quality of a product and to meet these requirements the first step in the chain are Good Manufacturing Practices (GMP). FAO is the organization that establishes the procedures that must be followed to obtain a quality final product. The objective of this review is to verify if the countries of South America comply with the requirements established by the FAO, through a systematic investigation of scientific articles using the PRISMA method for the inclusion and exclusion of information. For this purpose, the variables involved in the control and regulation of GMP in each country, governmental organizations or ministries responsible for compliance with internal regulations for the implementation of a food industry were analyzed. The comparative analysis made it possible to determine that the countries of South America comply with the quality parameters established by FAO and Codex Alimentarius, with the exception of Guyana and Suriname in which the control and regulation of GMP is not in charge of the state. Ecuador and Paraguay comply exactly with all the parameters and the rest of the countries as a complement to the established in the FAO in certain parameters are stricter to ensure the health of the consumer and avoid food-borne diseases (ETA).
