Riassunto:This study analyses the gastronomic potential of the máchica as a traditional symbol of the parish of Zumbahua, canton Pujilí, province of Cotopaxi. The research was carried out under a mixed approach, with a descriptive scope and a non-experimental crosssectional design. To collect information, surveys were administered to 267 inhabitants, interviews were conducted with community actors involved in the production and consumption of máchica, and a specialised documentary review was conducted. The results indicate that the máchica has a high cultural value, being recognised as an essential element of local identity. Furthermore, it is confirmed that it has the potential to strengthen both the gastronomic and tourist offer of the parish. The community identified it as crucial to preserve traditional production techniques, local ingredients, and the transmission of ancestral knowledge. Based on these findings, a proposal is made to create an information leaflet to help revalue the máchica, disseminate it, and integrate it into local development strategies.
