| Тойм: | The OTILAC Cheese Industry, located in the community of Paquibug San Gerardo, belonging to the San Andres Parish, Guano canton, Chimborazo province, is an establishment dedicated to the production and marketing of fresh cheese, which seeks to find the needs of consumers. For this reason, OTILAC Cheese Industry requested to the National University of Chimborazo, in the Faculty of Engineering, to the School of Agro-industrial letter dated July 12, 2021, the collaborate of one student in the process of graduation to conduct an investigation in the industry and subsequently implement a manual of Good Hygiene Practices, so the workers of this cheese industry can greatly improve the quality of the product and comply with the requirements of the SANITARY TECHNICAL REGULATION ON CORRECT HYGIENE PRACTICES ARCSA-DE-057-2015-GGG issued by the Directorship of National Agency for Regulation, Control and Sanitary Surveillance of Ecuador. This standard was considered to know the current situation of the company, whereby a situational diagnosis was made through the application of a Checklist resulting in an average of 45% of very satisfactory compliance, 21% of satisfactory compliance, 19% of partial compliance, and 15% of non-compliance of a total of 100%. Subsequently, the Pareto and Ishikawa diagrams were applied to determine the deficiencies that the company OTILAC shows so that this research was pertinent to implement a manual of Good Hygiene Practices in order to correct the current hygienic deficit and achieve an innocuous food product for human consumption. |
