Sažetak:ABSTRACT: The present work was developed in the modality of bibliographical research, to relate the presence of Escherichia coli in water and food as an indicator of sanitary quality; The increasing incidence in recent years of diseases transmitted by these vehicles seems to be related in many countries to the presence of microorganisms in food. The study is based on a documentary research design, in the review process, it was possible to find 68 scientific articles, through the inclusion criteria a total of 29 articles obtained in documents and databases such as; Official pages, Theses, Books, ResearchGate, Redalyc, Scielo, R.uees, R.vis, Scopus, R.Unilibre, Diainet, Tullastrasse, Inc, Etpcba, RDucf, 1Library, R.cEcuador, Biomedica, Inocar, Busalud, R.udea, R.auft, and Elsevierdoy. The collection of the articles was from 2011 to 2021, wherein the discussion of the results the stated objective was achieved, which was to collect information to establish E. coli as a quality parameter in water and food, through research The results that helped verify that Escherichia coli fulfilled the importance to be considered as a pathogenic agent that can contaminate was established, all this due to contact with fecal matter and incorrect handling of the products since they are not applied properly, In all the investigations, the bacterium is established as dangerous, its presence means that cross-contamination occurred due to poor handling of the food.
