| Тойм: | The cheese factory of the Cornelio Dávalos Association is an entity that is part of the Decentralized Autonomous Government of the Province of Chimborazo GADP-CH, and is located in Colta town, Llinlin community, Pucará neighbourhood, which offers to citizens dairy products, standing out the cheese of cool type. The staff working for this entity is aware of the importance of the certification of Good Manufacturing Practices for its own growth, by which the aim of this research work was the elaboration of a Handbook of Good Manufacturing Practices. The first activity that was performed was the application of a checklist, through wich information was obtained according to the initial state whereby the cheese factory was found, showing as result 68% of non-compliance of the requirements for the named certification. Subsequently the results were analyzed using the following quality management tools: cause-and-effect diagram of Pareto; which helped us prioritize certain sections such as facilities, assurance, and quality control; the proceeding step was the elaboration of the handbook by attaching a guide to standardized operational procedures for sanitization; to ensure safety during the production and merchandising of the cool typed cheese. |
