Shrnutí:In the research project, the safety and handling of food production in the school cafeterias of private schools in the Atocha-Ficoa parish, Ambato canton, were analyzed. The study was based on the inadequate handling of food during production, which causes foodborne illnesses (FBIs) that could affect the health of consumers. Therefore, the goal was to analyze the safety methods during the preparation and distribution of food in school cafeterias to prevent FBIs. For this reason, data collection tools such as surveys were used with the staff working in the food establishments of the educational institutions, and interviews were conducted with the authorities responsible for hiring these staff members. The aim was to understand the requirements needed to access school establishments, the protocols to follow when hiring, and whether the staff is trained before starting their duties. The findings showed that greater knowledge about food handling and production is necessary.
