As mentioned there is the alternative development of developing Businesses for mortadella sausage barbecue and protein from soybean (Glycine max), in the city of Loja, innovative alternative which aims to provide a different product, developed with a friendly process the environment and above all has an important nutritional value because its main raw soybeans, agricultural raw material short course which is cultivated in our environment with high yields. The methodology used in the study provided the description of the methods and techniques used to develop research and determine the calculation of sample size, established in 195 families in the city of Loja, the implementation of the surveys, tabulation and interpretation of work results. On the financial study it can determine that the project requires an investment of $ 208547.11 that was found by detailed fixed assets totaling $ 203551.50, intangible assets of $ 4422.62 and working capital $ 3802.63, with funding of 30% equity and 70% of funding provided by the National finance Corporation (CFN).
