These financial and non- financial results allow those who make up the study sector to make informed decisions, establish growth opportunities and compare their position with the competition. Within this context, the objective of this research is to carry out a sectoral diagnosis of the activity of selling bakery, confectionery and pastry products in specialized establishments in the Loja canton. The methodology used was a mixed approach that combines documentary and field methods with an exploratory and descriptive scope; Information was collected through the application of 25 questionnaires to business owners located in the study sector. As a result of the investigation, a high level of competition was evident in businesses in the same sector. In addition, information was collected on the main and secondary products offered by this sector, as well as the different relevant characteristics; On the other hand, a base of potential customers was established which includes families as well as the economically active population that seeks quality, innovative products and prices according to their various budgets. Finally, business performance indicators were established for the sector focusing on its key success factors, which were a trained and productive workforce, efficient administrative management, sales, prices, image and hygiene. In conclusion, the results will be useful for the sector, the study suggests that companies in the retail sector of bakery, confectionery and pastry products in specialized establishments in the Loja canton play a crucial role in local development. maintaining good organizational performance and experiencing constantly growing demand. |
