Summary:The Salmonella typhi is a bacterium that causes typhoid fever which is transmitted by the ingestion of food or water contaminated with feces or urine of people infected or carrier of this bacterium (1). It is part of the food-transmitted illnesses, constituting a public health problem with high rates of morbidity and mortality at worldwide level (2). That is why this research work detected the presence of S. typhi through the fecal culure, likewise it was determined the presence of antibodies against S. typhi through Widal Reaction, also the results of the fecal culture were related to the Widal Reaction and finally a preventive educational proposal addressed to the tenderers of prepared food by the staff of the Mercado Cenro Comercial market was performed. The study is descriptive cross-sectional, with a sample of 74 owners, who underwent to a fecal culture on agar Salmonella-Shigella (S-S) agar Hektoen, biochemical tests, and Widal reaction; concluding that 9 (12%) patients have the bacteria by fecal culture; while 23 (31%) of the patients showed the presence of antibodies against S. typhi through the Widal reaction; relating the results obtained by the fecal culture with Widal Reaction 4 (45%) patients are related to the O antigen in dilutions> 80; while 5 (55%) patients are related to the H antigen in dilutions> 80; and through the results and obtained information it was planned an educational preventive proposal to the health personnel of the Mercado Centro Comercial market which will be responsible for disseminating such information to the tenderers of prepared foods.
