That is why it was thought advisable to carry out a project of gourmet coffee in filter on being an innovative product for the convenience and speed of product use organic coffee being taken directly to the consumer palate with exquisite taste Lojano last coffee which will save time and money, and our market Lojano homes, hotel companies and others as this product will offer the opportunity to taste it in any place with the same quality and has no negative influence on the health of consumers. In this project use it was made of some methods, techniques and instruments including the deductive method, inductive method, analytical method and descriptive method was used. Among the techniques is the collection of information among these: literature, statistics, observation, interviews, surveys and others. For the research segment Loja was used, according to the projection given by the National Institute of Statistics and Census (INEC) population for 2010 was 180,617 inhabitants, as it is performing market research a product food, then the study population was carried out by families, therefore is divided by 4 family members so that you get that in the city of Loja is home to approximately 45,154 families. For the study population for the base year, in this case 2014, the population is projected resulting in 49,259 families. Accordingly the sample size to 383 surveys were applied was obtained. In addition to determining the offer a survey of shops in the city of Loja, which are the same numbers as in INEC between 2,449 wineries, markets, shops and supermarkets it took place. Giving a sample size of 334 surveys applied. As part of market research, it was determined that there are significant levels of acceptance that company, with the first year for a share of the unmet demand for 52,719 boxes of 20 gr. Regarding the Technical Study and based on the results of market research, it was possible to determine a capacity utilization of 75% for the first year and then will increase to 5% each year until a capacity utilization of 95% in the tenth year. As for the engineering of the project, the necessary specifications for the appropriate adjustments in order that facilities have the best conditions and adequate staff to provide excellent services. To finance the initial investment, prior to the launch of the company is determined to supply 74% of the partners in the amount of $ 14,150.07 and 26% with a bank loan worth 5,000. Has made the project evaluation, the same as by applying mathematical formulations has allowed to determine their feasibility and that is based on the following results: Net Present Value (NPV) is positive and is $ 10.004,44; the benefit-cost ratio, said that for every dollar invested, a return of 15 cents is obtained; IRR gives a percentage of 22,70% which is higher than the opportunity cost of capital; The recovery period noted that the investment is recovered in 3 years 4 months and 24 days; with sensitivity analysis, increasing costs by 6,84% sensitivity coefficient of 0.99 is obtained and reducing revenues by 5,93%, 0.99% is obtained, indicating that the project is not sensitive to these variations. By conducting this study it was possible to meet the objectives as by the results of market research, technical, budgetary and financial evaluation, it was determined that the introduction of a producer of gourmet coffee is feasible Filter envelopes for the city of Loja. They finally reached the respective conclusions and recommendations for the present research.
