| Crynodeb: | This research had as objectives identify and quantify the lactoferrin protein present both in goat milk and in cow milk in order to compare the concentrations of this protein in both species. The quantification was performed with the High-performance liquid chromatography (HPLC) method. For the research, 30 samples of goat milk and 10 samples of cow milk were analyzed in the Instrumental Chemistry Laboratory of the Natural Resources Biotechnology career of Salesian Polytechnic University. To carry out the lactoferrin quantification, a calibration curve was created with its respective equation, the value of which was of R=0,999 to different standard solutions of lactoferrin, an acceptable value to proceed with the analysis of each species. Statistical analysis determined that there is a significant difference p< 0,05 (2,2×10-16) between the concentration of lactoferrin present in goat milk and cow. The obtained results in the investigation were: goat milk contains 36% more lactoferrin than cow milk due to the average concentration of lactoferrin in goat milk is 182,2 mg/L, while cow milk is 116,3 mg/L. |
