During the last years, in the world, the studies that try to interpret the quantitative and qualitative changes in the MO influenced by different management practices have intensified. As well as the consequences of changes in the MO on other physical, chemical and biological properties. The frequent use of organic matter allows to solve the problems of soil fertility, improve the capacity of water retention and air circulation, favor the development and invigoration of plants; It increases the ability to naturally control insects, mites, nematodes as pathogens. Whatever the source to be used, its application must respond to a previous analysis of the soil (nutrients, C/N ratio and microorganisms) and can be applied according to its richness up to twice the requirement in terms of pure mineral elements, since its assimilation and subsequent absorption is quite slow
