Sumari: | Gastronomy and culture are related, since when they are united they take on a value that gives life to the process of converting food into a heritage, and for this reason they can be defined as tangible elements of local culture. In Vinces, typical dishes are part of the gastronomic tourism on offer, and are also one of the main sources of foreign exchange. However, it is not identified as part of the cultural identity, but as an option to satisfy their food needs. This research is of a qualitative nature, so that in situ observation was used, through which the current situation of gastronomy could be verified, among them; the non-recognition of gastronomy as a cultural experience, lack of protocols, disinterest of the cantonal public entities in making local gastronomy known. The gastronomic tourism that has been carried out in the last years has not covered in a generalized way the cultural concept, therefore, it is not considered as part of the cultural history of vinceña. At the moment efforts are made that involve the private and public sector, that have as main objective to present the gastronomy to the world and this way to possess it in the place that deserves like the gastronomic capital of the province of Los Rios. |
