Nowadays, various types of preservation methods are available that can be used to maintain the quality of food products for a long period of time, whether using conventional or modern preservation technology methods, some of these preservation methods use additional food preservatives that can be classified into the category of artificial and natural preservatives. For this case study, three specific artificial preservatives are investigated, in this case it is about Nitrites and nitrates, Sodium benzoate and Potassium sorbate. On the other hand, the negative effects of three types of artificial preservatives on health are analyzed. It also points out the gaps in information and areas of research that are required to evaluate the benefits and risks of these preservatives. In addition, it presents aspects related to the long-term consequences of its consumption for human health.

Los métodos de conservación son la mejor forma de mantener la calidad de los alimentos y evitar su deterioro. Hoy en día, se encuentran disponibles varios tipos de métodos de conservación que pueden usarse para mantener la calidad de los productos alimenticios durante un largo período de tiempo, ya sea utilizando métodos de tecnología de conservación convencionales o modernos, algunos de estos métodos de conservación utilizan conservantes alimentarios adicionales que se pueden clasificar en la categoría de conservantes artificiales y naturales. Para el presente caso de estudio se investiga acerca de tres conservantes artificiales específicos, en este caso se trata sobre los Nitritos y nitratos, Benzoato de sodio y Sorbato de potasio. Por otro lado, se analiza los efectos negativos de tres tipos de conservantes artificiales para la salud. También señala las carencias de información y las áreas de investigación que se requieren para evaluar los beneficios y riesgos de estos conservantes.
