Shrnutí:The research deals with the gastronomic study of the autochthonous dishes of the region and the implementation of a gastronomic route in the La Mana canton, Cotopaxi province. Its main objective was to analyze the gastronomy, in addition to investigating the native dishes, the gathering of information on the La Mananense gastronomy was carried out to implement a gastronomic route in the La Mana canton. In the development of the research, it was found that the gastronomy in the region is tradition and flavor, due to its strategic geographical location, however, despite having an excellent gastronomy, the people who visit the canton think that the best option to delight their palate is found in the markets and with more affordable prices. The implementation of the gastronomic route will influence the tourist, economic and social development of the canton, turning it into a power as a place that gathers flora, fauna, gastronomy, fresh climate and quality service to visitors from the sector and from other regions.
