Resumo:Salmonellosis is an important public health disease, as it is one of the main causes of food poisoning worldwide, this study's main objective is to determine the incidence of salmonella in chicken eggs and its impact on public health. It was carried out following an inductive, deductive bibliographic methodology, within the results of the research we can mention that in the case of birds, as in other animal species, the excretion of Salmonella through feces is intermittent, usually coinciding with stressful situations. , such as transport, the mixture of animals of different ages, or coincidence with other diseases, especially immunosuppressive ones, following the structure of the research work, it is concluded that the longer the egg spends a long time stored in conditions that are conducive to growth and multiplication of microorganisms, there are more possibilities that s and contaminate.
