Determinación de los procesos artesanales para elaborar harina y cereales de amaranto (Amaranthus caudatus L.), en la comunidad de Iltaquí, cantón Cotacachi

SUMMARY This work was carried out in the community of Iltaquí, Canton Cotacachi; Whose theme was the "determination of the processes, artesanalts for the cultivation of amaranth" (Amaranthus caudatus The objectives raised were: Learn about the artisanal production of amaranth flour and cereal; establish the processes of industrialization and generation of added value, the cultivation of Amaranth (Amaranthus caudatus) and determine the volumes of flour and cereal processed. Amaranth is a very interesting crop because of its great nutritional and medicinal value, considering it today as a grain that should not be lacking in the food of people, so it is important its industrialization. The organization Mama Muro Cunapa was born with the initiative to industrialize the amaranth, to generate an added value, to market and to obtain better income for its partners. Currently the organization processes or industrialized amaranth flour and busted cereal whose product is distributed throughout the country, mainly to naturist stores, from there these distribute to select customers: It is important to note that this crop It has a great diversity of culinary preparation, it can be used alone or accompanied, generating a great expectation and a good vision of ventures for the future. It is important for the government to support and invest in this sector to improve production, harvesting, poscoscha and marketing processes.
