| Résumé: | This research project aims to evaluate the quality of raw milk received in the Belisario Quevedo parish of the Latacunga canton. Three tests were developed to identify the quality of milk in the area (physical, chemical, microbiological analysis, and detection of antibiotics in milk), tests before socialization, and the application of a milk quality improvement plan for small and medium-sized producers. We employed the EKOMILK-120 analyzer, which combines ultrasound waves and near-infrared spectrophotometry (NIR) technology, for the physical-chemical examination. The microbiological examinations were based on the count of somatic cells, aerobic mesophiles, total coliforms, and fecal coliforms. The detection of antibiotics was developed using the Bioeasy tri-sensor kit, specific for the presence of sulfonamides, beta-lactams, and tetracyclines in milk. For the statistical analysis, we used the Student's T test for paired samples of each variable, to evaluate the significant difference. Obtaining as results that the physicochemical parameters for fat, protein, lactose, and density, are within the acceptable range established in the national regulations, in all milk samples. The microbiological analysis revealed high bacterial counts in the Manzana Pamba, Galpón Loma, and Tunducama neighborhoods, which suggests the need to implement more rigorous hygiene and management practices in the milk production chain. The milk quality improvement plan contributed to a short-term improvement in milk quality since contamination at the time of ordering was the main problem found in small farms. |
