| Summary: | This project aims to contribute to the recovery and use of an industrial waste such as whey through the production of protein powder from whey from the company LACTOZAM. The problem generated by dairy companies in Ecuador is the waste of whey in the watersheds, contaminating the ecosystem. According to statistical data from the Ministry of the Environment, 85% are small industries that do not have sufficient support from the central government; This by-product of cheese making is a pollutant contributed by companies due to its physicochemical properties and its composition, which includes fats, sugars, proteins and minerals. The industrial process of the company LACTOZAM was characterized, one of the dairy companies located in the province of Cotopaxi in which a data survey was carried out and it was obtained as a result that 1500 liters of whey are discarded monthly without any adequate treatment of which 5% of whey is used as feed for pigs and cattle. To solve this problem, a study was carried out on the use of the by-product for the design of an industrial process for protein production. The objective of the work is to design the production process to obtain proteins from whey, membrane technology was applied in the protein extraction process in the company LACTOZAM in order to take advantage of the by-product to generate new products, in which parameters of processes for its manufacture of protein concentrate in the expected time and volume and thus obtain positive yields. |
