Summary:Celery (Apium graveolens) native to the Mediterranean has a high nutritional value, being rich in potassium. In Ecuador there are no specific data on celery cultivated area, but it is estimated that production of this crop in the Izamba in the province of Tungurahua over 12 acres, according to the Third National Agricultural Census in the year up 2000 without exact figures for Machachi in Pichincha, Cotopaxi and Panzaleo. The aim of this work is directed to reduce post-harvest losses ranging up to 30%, this problem occurs due to lack of good storage, traders said that the wholesale market Latacunga which is the main objective of this research.
