| Riassunto: | This investigative work was carried out in the Juices and Nectars Area in the vegetables preserves company “La Conchita". As a general objective of the investigation was taken: To elaborate a Proposal to Bring up the System of Quality date and Inocuidad in Juices and Nectars area. Also the following specific objectives were traced: to analyze the Cuban Standard NC: 136:2007 and the effective resolutions in the Quality field and Inocuidad in the area, to diagnose the current conditions of the Main Dangers and Critical Points of Control in Juices and Nectars area and to propose solutions to minimize the discovered risks and the detected problems. The following conclusions were taken: Most of the identified risks in the area are important. The faulty Quality and Inocuidad administration in the Work in the study object area is due to the organizational problems. The application of a proposed action plan to the detected problems and of the Quality and Inocuidad Manual for Juices and Nectars Area will allow to minimize the risks to develop the Quality and inocuidad System (Analysis of Dangers and Critical Points of Control) of the company. |
