Gaia:The objective of this work was the implementation of Good Manufacturing Practices (GMP) according to resolution ARCSA-DE-067-2015-GGG, in order to reduce the level of product contamination risk and open new market opportunities. , in the “SELVAWA Amazonia” microenterprise. The microenterprise is located in the Tena canton of the province of Napo and is dedicated to the production of preserves and hot sauces with local products and the packaging of fresh vegetables. Prior to implementation, an evaluation of the initial state was carried out using the ARCSA checklist. After processing the data, the compliance percentages of each section of the BPM were obtained, such as: facilities, equipment and utensils, manufacturing hygiene, raw materials and supplies, production operations, packaging, transportation and quality. Obtaining a compliance percentage of 64.49% in general. Once the non-conformities were identified, a proposal for improvements was drawn up that includes the following aspects: facilities, safety, quality assurance and documentation. In the end, after the implementation of the proposal, a second evaluation was carried out that resulted in a considerable improvement in the percentage of compliance with BPM standards, the general result was 88.79% with an increase of 24.3%. By section, the percentage increases are: installations 20.00%; equipment and utensils 6.67%; hygiene in manufacturing 28.57%; raw material and supplies 8.33%; production operations 23.33%; packaging 7.14%; transportation and distribution 27.78% and quality assurance 58.33%. In turn, as part of the implementation of the improvements, the BPM manual was delivered with standardized procedures, instructions and records.
