Streszczenie: | The objective of this work is to use technological applications of the meat emulsifier in Agroindustrial transformation processes, which contains a characterization of the equipment, in which the operation and maintenance manuals of the meat emulsifier are detailed, in the same way He carried out experimental practices on the application of this and other equipment in processes of elaboration of processed meat products. This work serves as a guide for the teaching-learning process of the students of the Agroindustry career. This equipment is located in the meat laboratory of the Technical University of Cotopaxi. The meat emulsifier is made of stainless steel with a capacity of 150 kg/h, which requires an electrical potential of 220 volts. The cutting system that this equipment has is of high revolutions. This machine produces a fine cut between the perforated disc and the blades, it has control panels, which guarantees a safe operation, with innocuous and quality products. In the present work the descriptive investigation is used for the elaboration of the manuals, where the parts of the meat emulsifier are specified, while in the operation manual the main characteristics of the equipment are described, a maintenance manual was also elaborated, being the fundamental base to extend the useful life of the equipment. Within the types of maintenance that this machine requires, the following is specified: routine, preventive, predictive and corrective maintenance; In addition to considering, it important to prepare a prevention guide for personnel and personnel who operate the machine for their safety. Subsequently, experimental practices are developed with the meat emulsifier, in which the obtaining of different products such as: pork bologna, chicken sausage and chicken bologna is efficiently described. At the end of the manual are the different operating and maintenance records required by the meat emulsifier. |
