Резюме:The research, gastronomic guide of native dishes is presented to the needing to provide to Cotopaxi province a study has been done to rescue identity and food culture, food being vital to the survival of mankind, therefore in our country and specially in our province has existed specific forms of eating from our ancestors, which it has been losing the right way to eat nutritionally. The project tries to rescue native and healthy eating forms and rescue native dishes that are lost because foreign food and recipes are introduced, which harms our food identity. Therefore we have proposed to design a gastronomic guide, in which native meals will be rescue in Cotopaxi province, applying editorial design, to consider four towns in the province, given that in some towns there is repeated the same dish or way of eating.
