Sumari:Considering the need for laboratory equipment that allow the extraction of vegetable fat, the initiative to develop a press that allows to develop research in the process of obtaining vegetable oil, for this is taken as reference extraction chontilla oil emerges (bactris gacipaes) cold, this type of extraction will maintain the quality of fat, unlike the solvent extraction method or by high temperatures that could alter the quality of the final product. Implement this process would resemble the "extraction of vegetable water" applied in obtaining oil extra virgin olive oil of excellent features in its composition. In equipment manufacturing different alternatives were selected for easy removal without damaging the product quality also different pressing forces, hole dimensions of the sieves and conditioning product were evaluated. The system that gave better results was pressed by a pneumatic double-acting rod and to optimize the extraction process one alpechín (jute canvas or molding), the same that will improve the purity of the extracted oil was placed. In the evaluation process equipment performance it was determined by material balance different pressures and conditioning of the raw material is evaluated, in this case the chontilla. An analysis of the cost of production of equipment for exclusive use in scientific research in the laboratory as well as the unit cost of oil extracted, for using a projection to plan the stage of industrial extraction, the same as cheapen costs was made. For evaluation of the process of obtaining oil cold one statistical model randomized block with factorial model AxB was applied were evaluated as variables: performance, PH,% humidity, to get an approximation of product quality, which could serve as a starting point for further research, aimed at improving the quality of edible oils.
