Summary:Infusions are one of the most important drinks since ancient times because of the properties attributed to it as antioxidants, comfortable and relaxing, resulting in an infusion with very important characteristics, which is why ginger was combined with honey and vitamin C , where its multiple properties are those that it is intended to take advantage of, the objectives set were to perform chemical, microbiological and organoleptic physical analysis and the cost of producing the treatments to evaluate the quality of the product. The research was carried out in the Experimental Estate "La María" of the State Technical University of Quevedo, in the Bromatology laboratory of the Faculty of Animal Sciences, located at Km 7.5 via Quevedo - El Empalme. Moisture, ash, Brix grades and ash insoluble in hydrochloric acid analyzes were performed to verify if they comply with the INEN 2392: 2007 standard of aromatic herbs, in addition to the organoleptic analysis where color, taste, aroma and acceptability parameters were measured. Completely randomized design with a comparison of Tukey (p ≤ 0.05), the best treatment was T5 composed of (90% ginger, 10% honey) and addition of vitamin C (food ascorbic acid 80mg), with the following light brown characteristics, ginger taste and ginger aroma, honey and vitamin C, in terms of acceptability the T5 treatment was the one they liked since it contains the highest percentage of honey, in the production cost the T5 treatments It was worth $ 5.48. The elaborated product is an option towards the aromatic herbs market, thus providing new alternatives for consumption for both farmers, processors and consumers.
